Caramelised Onion Tart with Blue Cheese

Ingredients

- 1 tbsp olive oil
- 3 large brown onions, thinly sliced
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 1 sheet puff pastry, thawed
- 4 tbsp Black Swan Chunky Roasted Sweet Potato & Cashews (with extra to dollop)
- Crumbled blue cheese, to top
- 2 sprigs of thyme, to garnish

Method

  1. Bring a large frypan on medium-high heat. Add the olive oil and fry the onions for 15-20 minutes until starting to caramelise. Once the onions have turned brown, add the brown sugar and balsamic vinegar. Remove from heat.
  2. Preheat oven to 200°C.
  3. Place the puff pastry on a lined baking tray and spread the Black Swan Chunky Roasted Sweet Potato & Cashews on top, leaving a 2cm border. Top with the caramelised onions. Bake for 15-20 minutes or until golden.
  4. Remove from oven and top with the crumbled blue cheese, extra dollops of Sweet potato dip and sprinkled thyme leaves.
